Fig - Hazelnut Bread

Ingredients:
2 cups chopped dried figs
1 tsp baking soda
1 tsp salt
2 cups boiling water
3 eggs
1 1/2 cups sugar
1/2 cup soft butter
1 cup chopped nuts
You can change this delicious Fig and Hazelnut Bread recipe made with Myrtle Creek Organic Red Fife Wheat Flour to reflect the seasons by swapping the dried figs for other dried fruits such as dried cherries or plums.
Instructions:
Combine figs (or other dried fruit), soda, salt and boiling water.
Beat eggs, add sugar and butter to eggs and continue to beat until light and fluffy.
Stir flour into egg mixture and add in the fig mixture and nuts.
Blend well.
Divide batter into 2 greased loaf pans.
Bake at 350 degrees Fahrenheit for 1 hour or until a knife inserted into the center comes out clean.
