Ingredients:
3 eggs
1 cup sugar
1 cup vegetable oil
3 tsp vanilla
2 cups peeled, raw, grated zucchini
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/2 tsp baking powder
1 cup chopped walnuts

Instructions:
Mix together first 5 ingredients.
Fold in flour, salt, baking soda, cinnamon and baking powder. Add chopped nuts if desired.
Divide batter between two greased and floured loaf pans.
Bake at 325 degrees Fahrenheit for 1 hour.
