Whole Wheat Hamburger Buns

Ingredients:
For buns:
3 1/2 cups Myrtle Creek Organic Umpqua Red Hard Wheat Flour OR Myrtle Creek Organic Umpqua Red Hard Wheat Flour
2 1/2 tsp instant yeast
1 1/2 tsp salt
1 1/4 cups warm water
3 tbsp honey
3 tbsp vegetable oil
1 large egg at room temp.
For bun toppings:
1 egg
1 tbsp water
2 tbsp sesame seeds
2 tbsp melted butter
These whole wheat hamburger buns made with Myrtle Creek Organic Umpqua Red Hard Wheat Flour or Organic Red Fife Wheat Flour are soft and tender and the perfect accompaniment to any burger.
Instructions:
Mix together 3 cups flour, salt and yeast. Set aside.
In a pan, warm honey and water to approx. 120 degrees Fahrenheit.
Add honey and water mixture to the flour and mix.
Add whisked egg and oil.
Continue mixing and add remaining flour little by little until dough starts coming together. You may not need all the flour. Dough will be a little sticky.
Knead dough by hand or with mixer for 10 minutes. Dough will be smooth and a little sticky but will spring back when you poke it.
Transfer dough to oiled bowl, cover with plastic wrap and keep in a warm place for 1 - 2 hours or until doubled in size.
After dough has doubled, punch it down to release air.
Divide into 8 portions. Roll each portion into a ball and place on baking sheet about 3" apart. Cover with towel and let rise until almost doubled in size (about an hour).
Preheat oven to 400 degrees Fahrenheit.
Whisk together egg and water and brush onto dough balls. Then sprinkle with sesame seeds.
Bake for 10 - 12 minutes, rotating once. The tops will be golden brown when done.
Remove from oven, brush with melted butter (optional) and transfer to wire rack to cool.
